Potato & Italian Sausage Soup

The genius of this simple soup is in the use of leftover mashed potato as the soup base. I was going to call it Sausage & Mash Soup but while the name has a certain colloquial charm, it does - as my wonderfully snooty grandmother would have said - sound rather common.

Mashed potatoes are already soup of a sort; A very, very thick soup. All they need to reach their silky, slurpable potential is a cup or two of stock and a few floaty bits. For this recipe I selected Italian sausages, kale and mushrooms for the floaty bits, mainly because that's what I had in the fridge. So, feel free to mix it up; It's soup not soufflé, and pretty difficult to cock up.
Potato & Italian Sausage Soup
~ serves 4 ~
Ingredients
2 or 3 cups of leftover mashed potato
1 litre chicken stock
1 cup sliced mushrooms
3 fresh, uncooked Italian sausages (pork and fennel is best)
4 large kale leaves, washed and finely chopped
3 finely chopped cloves of garlic
1 tbsp olive oil
Salt to taste
Generous grind of black pepper
Method
Squeeze the uncooked sausage meat out of the skins and pinch off rough little balls - about 12 balls per sausage.
Put a large pot on a medium-high heat and add the oil. When the oil's hot, fry the sausage balls and the mushrooms until they're nicely browned.
Add the garlic and stir for about 2 minutes until the garlic aroma really starts to sing out.
Turn the heat down to low and add the mashed potato and about 1/4 of the stock. Stir until the stock and the mash have made a smooth paste. Now slowly stir in the rest of the stock and a good grind of black pepper.
Bring the soup to a simmer and let it gently bubble for 10 minutes, staring occasionally to prevent sticking and burning.
Add the chopped kale and bring it back to a simmer for another 3 or 4 minutes.

The image above is the sausage-free vegetarian version I knocked up for my eldest.
Serve with some nice crusty bread and a drizzle of extra virgin. I served mine with my fragrant Chilli & Fennel Seed Oil. I told you it would come in handy.
